A forgiving, portable brewer that produces a clean cup fast. Ideal for travel, offices, and mornings when you cannot commit to four minutes of pouring.
Method
01 · Set up
Insert paper filter, rinse with hot water, mount the chamber onto your mug (or the standard way — up to you).
02 · Dose and grind
15 g coffee, ground medium-fine. Add to the chamber.
03 · Pour
Add 210 g of water at 85 °C. Stir once, gently.
04 · Steep
Wait 1:15.
05 · Press
Attach plunger and press slowly, over about 25 seconds. Stop when you hear the hiss.
06 · Taste
If flat, next time try 88 °C. If harsh, try 82 °C. Water temperature is your knob.
The coffee
Any of our coffees will brew well on this method — the recipe above is calibrated for Bugisu, our flagship. For lighter African coffees (the Ethiopian and Kenyan lots when they land), consider dropping water temperature by 2 – 3 °C and grinding one step finer.
